Ingredients:

  • 2 large boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 4 Greek pita breads
  • 1 cup shredded lettuce
  • ½ cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • ½ cup cucumber, diced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce

Instructions:

  1. Prepare the Marinade – In a bowl, mix olive oil, Greek yogurt, lemon juice, minced garlic, oregano, cumin, paprika, coriander, salt, black pepper, and red pepper flakes. Stir well until combined.
  2. Marinate the Chicken – Slice the chicken breasts into thin strips and add them to the marinade. Coat the chicken evenly, cover, and refrigerate for at least 30 minutes (preferably 2 hours or overnight for maximum flavor).
  3. Cook the Chicken – Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes per side until fully cooked and slightly charred. Remove from heat and let it rest for a few minutes.
  4. Warm the Pita Bread – Lightly toast the pita bread on a dry pan or grill for about 1 minute on each side until warm and slightly crispy.
  5. Prepare the Toppings – Wash and chop the lettuce, cherry tomatoes, cucumber, and red onion. Crumble the feta cheese and set aside.
  6. Assemble the Gyros – Place a warm pita bread on a flat surface. Add a generous amount of cooked chicken, followed by lettuce, tomatoes, red onion, cucumber, and feta cheese. Drizzle with tzatziki sauce.
  7. Wrap and Serve – Fold the pita into a wrap and secure with parchment paper or foil. Serve immediately with extra tzatziki sauce on the side.
