Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat the eggs, sugar, and brown sugar until smooth. Add oil and vanilla extract, mixing well.
- Fold in grated zucchini and grated apple.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
- If using, fold in nuts and raisins.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
