Ingredients

  • 2 large apples (preferably Granny Smith or Honeycrisp), chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tbsp honey or maple syrup (optional, for sweetness)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the chopped apples, celery, red onion, walnuts (if using), and raisins or cranberries (if using).
  2. In a small bowl, whisk together the Greek yogurt (or mayonnaise), honey or maple syrup, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss everything together gently until the ingredients are well coated.
  4. Taste and adjust seasoning if needed, adding more salt, pepper, or sweetness as desired.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.
