Apple Pie Enchiladas

🛒 INGREDIENTS

  • 2 cans apple pie filling
  • 10 soft flour tortillas
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup butter (unsalted)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional, for extra flavor)

👩‍🍳 INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13 inch baking dish.
  3. Spoon about 1/4 cup of apple pie filling down the center of each tortilla.
  4. Roll up each tortilla and place seam-side down in the prepared baking dish.
  5. In a saucepan over medium heat, melt the butter.
  6. Add white sugar, brown sugar, and water. Stir well and bring to a boil.
  7. Reduce heat and simmer for about 3 minutes, stirring constantly.
  8. Remove from heat and stir in vanilla extract.
  9. Pour the sauce evenly over the rolled tortillas.
  10. Let it sit for 45 minutes (this helps the tortillas absorb the sauce).
  11. Bake for 40–45 minutes until golden and bubbly.
  12. Serve warm with vanilla ice cream or whipped cream.

💡 TIPS

  • Add chopped pecans or walnuts for extra crunch.
  • Sprinkle extra cinnamon on top before baking for stronger flavor.
  • For a caramel twist, drizzle caramel sauce before serving.
  • Best served warm for that gooey apple pie texture.
  • Store leftovers in the fridge and reheat before serving.
