Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, beat the eggs, then add milk, melted butter, and vanilla; whisk until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined — don’t overmix.
- Gently fold in the diced apples.
- In a large, deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
- Using a spoon or ice cream scoop, drop small portions of batter carefully into the hot oil. Fry in batches to avoid overcrowding.
- Fry each fritter for about 2-3 minutes per side, or until golden brown and cooked through.
- Use a slotted spoon to transfer fritters to a paper towel-lined plate to drain excess oil.
