Apple Fritters

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 2/3 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 2 cups peeled, diced apples (like Granny Smith or Honeycrisp)
  • Vegetable oil for frying
  • Optional: Powdered sugar or glaze for topping

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the eggs, then add milk, melted butter, and vanilla; whisk until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined — don’t overmix.
  4. Gently fold in the diced apples.
  5. In a large, deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  6. Using a spoon or ice cream scoop, drop small portions of batter carefully into the hot oil. Fry in batches to avoid overcrowding.
  7. Fry each fritter for about 2-3 minutes per side, or until golden brown and cooked through.
  8. Use a slotted spoon to transfer fritters to a paper towel-lined plate to drain excess oil.
