Ingredients:
- 1/3 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 2/3 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 2 apples, peeled and chopped (Granny Smith or Honeycrisp work well)
- For the glaze:
- 1/2 cup powdered sugar
- 1-2 tablespoons milk or cream
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a small bowl, mix the brown sugar and cinnamon. Set aside.
- In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour and baking powder. Gradually add this to the butter mixture, alternating with the milk, until well combined.
- Pour half of the batter into the prepared loaf pan. Layer half of the chopped apples on top, then sprinkle with half of the brown sugar-cinnamon mixture. Lightly press the apples into the batter. Repeat with the remaining batter, apples, and cinnamon mixture.
- Use a knife to gently swirl the cinnamon mixture through the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
- In a small bowl, whisk together powdered sugar and milk to make the glaze. Drizzle over the cooled bread before slicing and serving.
