Apple Crumb Bars

Ingredients

  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup light brown sugar, packed
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup unsalted butter, melted
  • 3 cups peeled, diced apples (about 3 medium apples)
  • 2 tbsp granulated sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking powder, cinnamon, and salt.
  3. Pour in the melted butter and mix until crumbly.
  4. Press about 2/3 of the crumb mixture into the bottom of the prepared pan to form the crust.
  5. In a medium bowl, toss the diced apples with granulated sugar, 1 tbsp flour, cinnamon, and lemon juice until coated.
  6. Spread the apple mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the apples, pressing lightly.
  8. Bake for 35–40 minutes, or until the top is golden brown and the apples are tender.
  9. Let the bars cool completely in the pan before cutting into squares.
  10. Enjoy as is or serve slightly warm with a scoop of vanilla ice cream!
