- 2 cups all-purpose flour
- 1 cup old-fashioned rolled oats
- 1 cup light brown sugar, packed
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1 cup unsalted butter, melted
- 3 cups peeled, diced apples (about 3 medium apples)
- 2 tbsp granulated sugar
- 1 tbsp all-purpose flour
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a large bowl, whisk together the flour, oats, brown sugar, baking powder, cinnamon, and salt.
- Pour in the melted butter and mix until crumbly.
- Press about 2/3 of the crumb mixture into the bottom of the prepared pan to form the crust.
- In a medium bowl, toss the diced apples with granulated sugar, 1 tbsp flour, cinnamon, and lemon juice until coated.
- Spread the apple mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the apples, pressing lightly.
- Bake for 35–40 minutes, or until the top is golden brown and the apples are tender.
- Let the bars cool completely in the pan before cutting into squares.
- Enjoy as is or serve slightly warm with a scoop of vanilla ice cream!
