Apple Cake

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 2 cups peeled and chopped apples (Granny Smith or Honeycrisp work well)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Stir in the sour cream (or yogurt) until well combined.
  6. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
  7. Fold in the chopped apples and nuts (if using).
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
