Apple Almond Bundt Cake

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced (about 2 cups)
  • 1/2 cup sliced almonds

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 tbsp milk or cream
  • 1/2 tsp almond extract

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan thoroughly.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream Butter and Sugar: In a large mixing bowl, beat together the softened butter, vegetable oil, and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fold in Apples and Almonds: Gently fold in the diced apples and sliced almonds.
  6. Bake: Pour the batter into the prepared Bundt pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Glaze: Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  8. Make the Glaze: In a small bowl, whisk together powdered sugar, almond extract, and milk or cream (add gradually until you reach your desired consistency). Drizzle over the cooled cake.
