Ingredients
- 4 chicken eggs
- 200 g sour cream
- 1 bunch of spring onions, chopped
- 1 medium tomato, diced
- 500 g potatoes, peeled and cubed
- 2 hunting sausages (or smoked sausages), sliced
- 50 g hard Parmesan cheese, grated
- Salt and pepper to taste
- A little butter or oil for greasing
Instructions
- Preheat the oven to 180°C (350°F). Lightly grease a baking dish with butter or oil.
- Boil the potatoes in salted water until tender but not falling apart (about 10-12 minutes). Drain and set aside.
- In a large bowl, beat the eggs. Add sour cream and mix well until smooth.
- Stir in the chopped spring onions, diced tomato, and grated Parmesan cheese. Season with salt and pepper.
- Layer the boiled potatoes and sliced sausages in the prepared baking dish.
- Pour the egg mixture evenly over the top.
- Bake in the preheated oven for about 25–30 minutes, or until the top is golden and the center is set.
