Instructions:
Step 1: Prepare the Cake Layers
- Preheat oven to 170°C (340°F). Grease and line two 8-inch round pans.
- In a bowl, whisk almond flour, all-purpose flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until pale and fluffy (3–4 minutes).
- Gently fold in melted butter, vanilla, and lemon zest.
- Gradually fold in dry ingredients until just combined.
- Divide batter evenly into pans.
- Bake for 22–25 minutes or until a toothpick comes out clean.
- Let cakes cool completely on a wire rack.
Step 2: Make Mascarpone Cream
- In a chilled bowl, whip heavy cream until soft peaks form.
- In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
- Gently fold whipped cream into mascarpone mixture.
Step 3: Assemble the Torte
- Level cake layers if needed.
- Place one layer on a serving plate.
- Spread a thick layer of mascarpone cream.
- Place second cake layer on top.
- Frost top and sides lightly with remaining cream.
- Decorate with almonds, berries, or chocolate.
