Alice Springs Chicken Recipe


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil (or butter)
  • Salt & black pepper, to taste
  • ½ tsp paprika
  • 4 strips bacon, cooked until crispy
  • 1 cup mushrooms, sliced
  • 1 cup shredded Colby Jack or cheddar cheese
  • ½ cup honey mustard sauce (store-bought or homemade)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and paprika.
  3. In a skillet, heat olive oil over medium heat and sear chicken for 3–4 minutes per side until golden brown. Remove from pan.
  4. In the same skillet, sauté mushrooms until tender.
  5. Place seared chicken in a baking dish. Spread honey mustard sauce over each piece.
  6. Top each chicken breast with sautéed mushrooms, a strip of crispy bacon, and a generous layer of cheese.
  7. Bake uncovered for 15–20 minutes, or until chicken is cooked through (165°F internal temp) and cheese is melted and bubbly.
  8. Garnish with chopped parsley and serve hot.
