Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil (or butter)
- Salt & black pepper, to taste
- ½ tsp paprika
- 4 strips bacon, cooked until crispy
- 1 cup mushrooms, sliced
- 1 cup shredded Colby Jack or cheddar cheese
- ½ cup honey mustard sauce (store-bought or homemade)
- 2 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and paprika.
- In a skillet, heat olive oil over medium heat and sear chicken for 3–4 minutes per side until golden brown. Remove from pan.
- In the same skillet, sauté mushrooms until tender.
- Place seared chicken in a baking dish. Spread honey mustard sauce over each piece.
- Top each chicken breast with sautéed mushrooms, a strip of crispy bacon, and a generous layer of cheese.
- Bake uncovered for 15–20 minutes, or until chicken is cooked through (165°F internal temp) and cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot.
