- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions
- Prep the Potatoes: Scrub the potatoes thoroughly and pat them dry. Use a fork to prick the potatoes several times on all sides.
- Season: Rub each potato with olive oil, then sprinkle with salt and pepper. Make sure they’re evenly coated.
- Air Fry: Preheat the air fryer to 400°F (200°C). Place the potatoes in the air fryer basket, ensuring they’re not overlapping.
- Cook: Air fry the potatoes for 35-40 minutes, turning halfway through. The potatoes should be crispy on the outside and soft on the inside when done.
- Serve: Cut a slit in the center of each potato. Fluff the insides with a fork and add your favorite toppings like butter, sour cream, cheese, or chives.
