A Simple Recipe with Zucchini

Ingredients

  • 2 medium zucchinis, grated
  • 100 g cheese, grated
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tbsp flour (or breadcrumbs)
  • Fresh parsley, chopped
  • Ground black pepper, to taste
  • Salt, to taste
  • Olive oil (for frying)

Instructions

  1. Wash and grate the zucchinis. Place them in a clean kitchen towel and squeeze out the excess liquid.
  2. In a bowl, combine zucchini, grated cheese, garlic, egg, flour, parsley, salt, and pepper. Mix until well combined.
  3. Heat a little olive oil in a frying pan over medium heat.
  4. Scoop spoonfuls of the mixture into the pan, flattening slightly to form patties.
  5. Fry for 2–3 minutes on each side until golden brown and crispy.
  6. Remove from the pan and place on paper towels to absorb extra oil.
  7. Serve warm with sour cream, yogurt dip, or a fresh salad.
