Ingredients
- 2 cups high-quality vanilla ice cream (or your favorite brand)
- 1 cup dark or milk chocolate chips
- 2 tablespoons coconut oil (for smoother melting)
- Wooden popsicle sticks
Instructions
- Line a baking sheet with parchment paper.
- Scoop the ice cream into bar shapes (or use molds if you have them). Insert a popsicle stick into each bar.
- Freeze the bars for about 30 minutes, or until very firm.
- Meanwhile, melt the chocolate chips with the coconut oil in the microwave in 30-second bursts, stirring until smooth.
- Dip each frozen ice cream bar into the melted chocolate, letting any excess drip off.
- Place the dipped bars back on the parchment paper and freeze for another few minutes until the chocolate hardens.
- Enjoy immediately or store in the freezer for later!
